Take a break from piping-hot pizza this summer and try our cooling combination of watermelon topped with sweetened sour cream, fresh fruit and torn mint.New-School Fruit Salad Sure, watermelon pizza is cute — but that's not the only reason to eat it. The tangy sour cream, the sweet slices of strawberry, the tart kiwi cubes, the crunchy coconut chips and the fresh mint are a cooling combination. Think of this as a new format for fruit salad. Choose the Right Knife Find a knife with a blade longer than your melon's diameter. If you don't have one, please pay close attention to where you place your non-cutting hand so you stay safe.
Slice It Cut a chilled watermelon into thick slices. Each melon makes about five pizzas. You can't tell by looking at it, but this watermelon is cold.
Add Sour Cream Sweeten some sour cream with granulated sugar. How do you know if it's sweet enough? Taste it. If it's good, you win. Make the dabs irregular like fresh mozzarella.
Add Diced Kiwi These reminded us of green peppers.
Next ... Add sliced strawberries.
Add Coconut Flakes We like the big ones. You can use sweetened shreds if that's what you have.
Sprinkle on Torn Fresh Mint Then, cut the "pie" into six slices. We know a real pizza has eight, but this is not a real pizza.
Serve It ... ... perhaps with some flaky salt on top.
