  • 1 tablespoon sugar
  • 1 tablespoon active dry yeast
  • 1 teaspoon salt
  • 1 cup warm water
  • 1/4 cup olive oil

For the Topping (Optional):

  • 1 egg yolk (for egg wash)

Instructions:

1. Prepare the Dough:

1.1 Activate the Yeast:

  • In a small bowl, combine the warm water and sugar. Stir to dissolve the sugar.
  • Sprinkle the active dry yeast over the water and let it sit for about 5-10 minutes until it becomes frothy.
1.2 Mix the Dough:

  • In a large mixing bowl, combine the flour and salt.
  • Make a well in the center and pour in the activated yeast mixture and olive oil.
  • Gradually incorporate the flour into the wet ingredients, mixing until a dough forms.
1.3 Knead the Dough:

  • Turn the dough onto a floured surface and knead for about 8-10 minutes until it becomes smooth and elastic.
1.4 First Rise:

  • Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-1.5 hours or until it doubles in size.

  • Roll each portion into an oval or rectangular shape on a floured surface. The thickness should be about 1/2 inch.
2.4 Transfer to Baking Sheet:

  • Place the shaped dough on a parchment-lined baking sheet.

2.5 Optional Topping:

  • Beat an egg yolk and brush it over the surface of the pides.
  • Sprinkle sesame seeds or Nigella seeds on top.
2.6 Second Rise:

  • Let the shaped pides rest for about 15-20 minutes for a second rise.
2.7 Bake:

  • Bake in the preheated oven for 15-20 minutes or until the Turkish bread is golden brown.

3. Enjoy:

  • Allow the Turkish bread to cool for a few minutes before slicing and serving.
