No-Bake Cookie Cake
Ingredients:
For the Cookie Base:- 2 cups quick oats
- 1 cup creamy peanut butter (or any nut or seed butter of your choice)
- 1/2 cup honey or maple syrup
- 1/2 cup unsalted butter
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
For the Topping:- 1 cup chocolate chips (dark, milk, or semi-sweet)
- 1/2 cup creamy peanut butter
- 1/4 cup chopped nuts (optional)
Instructions:
- Prepare the Cookie Base:
- In a large mixing bowl, combine the quick oats, peanut butter, honey or maple syrup, butter, vanilla extract, and salt.
- Mix and Microwave:
- Mix the ingredients well until everything is thoroughly combined.
- Microwave the mixture for 1-2 minutes until the butter is melted.
Stir and Press into Pan:- Stir the mixture again and press it firmly into the bottom of a greased or parchment-lined 9-inch round cake pan or a square pan.
- Prepare the Topping:
- In a microwave-safe bowl, combine the chocolate chips and peanut butter for the topping.
- Microwave in 20-30 second intervals, stirring each time until the chocolate is melted and smooth.
- Spread Topping:
- Pour the melted chocolate and peanut butter mixture over the cookie base, spreading it evenly.
- Optional Toppings:
- Sprinkle chopped nuts over the top if desired.
Chill:- Place the no-bake cookie cake in the refrigerator to set for at least 2-3 hours, or until the chocolate is firm.
